The Role 

Mandarin Oriental Makati is seeking an experienced and dynamic Chief Steward (Stewarding Manager) to join our pre-opening team. This pivotal role will oversee all stewarding operations, ensuring the highest standards of cleanliness, hygiene, and efficiency across the hotel’s kitchens and back-of-house areas. The Chief Steward will play a critical role in establishing systems, training teams, and supporting the seamless opening of the property.

 

Key Responsibilities 

  • Pre-Opening Setup
    • Develop and implement stewarding policies, procedures, and standards aligned with Mandarin Oriental’s brand values.
    • Plan and organize stewarding operations, including equipment procurement, inventory management, and layout design for back-of-house areas.
    • Recruit, train, and onboard stewarding staff to ensure readiness for opening.
  • Operational Excellence
    • Lead and supervise the stewarding team to maintain impeccable cleanliness and sanitation in all kitchens, storage areas, and service corridors.
    • Ensure compliance with local health and safety regulations, HACCP standards, and Mandarin Oriental guidelines.
    • Coordinate with Culinary and Food & Beverage teams to support smooth service operations.
  • Financial & Resource Management
    • Manage stewarding budgets, including labor, cleaning supplies, and equipment maintenance.
    • Monitor and control operating costs while maintaining efficiency and quality.
    • Implement waste management and sustainability initiatives to support the hotel’s environmental goals.
  • Leadership & Team Development
    • Inspire and motivate the stewarding team, fostering a culture of excellence, teamwork, and continuous improvement.
    • Provide ongoing training and development opportunities to enhance skills and performance.
    • Act as a role model, demonstrating Mandarin Oriental’s values of respect, integrity, and passion for excellence.


Qualifications & Experience Profile 

  • Proven experience as a Chief Steward or Assistant Manager in a luxury hotel environment, preferably with pre-opening exposure.
  • Strong knowledge of hygiene standards, food safety regulations, and stewarding best practices.
  • Excellent leadership, organizational, and communication skills.
  • Ability to work collaboratively with diverse teams in a fast-paced environment.
  • Commitment to sustainability and resource efficiency
