Mandarin Oriental, Tokyo is looking for a Commis to join our Banquet Kitchen team.

About the job
Based at the Mandarin Oriental, Tokyo / within the Banquet Kitchen Department in Tokyo, the Commis is responsible for the support in the station assigned to them by the Chef de Partie or the Sous Chef, motivated and passionate they are helping the team to prepare the daily mise an place and maintain cleanliness and keeping hygiene standards in the assigned area. The Commis reports to Chef de Cuisine.


As Commis, you will be responsible for the following duties: 
•    Ensure all menu items are properly portioned.
•    Follow all food safety and sanitation regulations.
•    Work efficiently under pressure.
•    Maintain a positive attitude and team-focused mentality.
•    Maintain a polite and professional demeanor when interacting with customers.
•    Be willing to learn new skills and take on additional responsibilities.
•    Take initiative to complete necessary tasks without being told.
•    Continuously strive to improve quality of dishes.
•    Demonstrate good judgment when dealing with difficult situations.
•    Continuously build knowledge and expertise in the culinary field.
•    Achieve proficiency in managing and adjusting cooking temperatures for a variety of food items, ensuring optimal flavor, texture, and safety.
•    Adjust cooking techniques to accommodate special requests or dietary restrictions.
•    Strive to deliver high-quality meals in a timely manner, ensuring that each dish meets the established culinary standards while maintaining an organized workspace.
•    Take initiative to perform additional tasks beyond assigned responsibilities.
•    Respond quickly to customer complaints or concerns.
•    To enhance the culinary offerings and overall dining experience, the line cook will analyze current menu items and propose innovative adjustments or new dishes that reflect seasonal ingredients, customer preferences, and current culinary trends.
•    Assist in food prep as needed.
•    Achieve consistent execution of high-quality dishes by adhering to the direction provided by the head chef and kitchen manager, ensuring adherence to standardized recipes and presentation guidelines.
•    Prepare food items according to standardized recipes.
•    Maintain a clean and organized workstation.
•    Consistently meet order completion times.
•    Collaborate with other kitchen staff.
•    Set up and break down workstation at the beginning and end of each shift.
•    Demonstrate strong time management skills to complete tasks within given deadlines.
•    Demonstrate proactive engagement in all aspects of kitchen operations, exhibiting a flexible and collaborative approach to assist team members wherever necessary.
•    Prioritize tasks effectively based on time and urgency.
•    Communicate effectively with servers and chefs.
•    Keep inventory of ingredients and supplies.
•    Attend all training and development sessions for kitchen staff.
•    Stay organized during high-volume shifts.
•    Take responsibility for completing assigned tasks.
•    Continuously improve speed and efficiency in the kitchen.
•    Be proactive in anticipating needs of others in the kitchen.
•    Attend regularly scheduled staff meetings.
