Mandarin Oriental, Costa Navarino is looking for an Executive Pastry Chef to join our Culinary team.

About the job

Based at Mandarin Oriental, Costa Navarino within the Culinary Department in Pylos, Messenia, Greece, the Executive Pastry Chef is responsible for the proper operation of the pastry and bakery department, while ensuring that agreed quality, hygiene and other Mandarin Oriental standards are kept or surpassed, at all times, by all team members. The Executive Pastry Chef reports to the Executive Chef.

As Executive Pastry Chef, you will be responsible for the following duties: 

  • Always check on the quality of the ingredients and products to achieve the maximum guest satisfaction on this level, while making sure that all products meet the preset standards, the preordained portion size, and that all colleagues follow the proper procedure and recipes.
  • Plan, co-ordinate and supervise all menu implementations in a timely manner.
  • Upgrade constantly any decoration or show pieces provided on buffets, cake counter or others to achieve the most efficient merchandising possible and remain always be on the look out to improve general production as a whole.
  • Motivate, lead by example and create enthusiasm for training and development amongst all Pastry team members.
  • Foster positive thinking and motivation within pastry kitchens by giving active assistance and advice on more effective ways of running the pastry department.
  • Assist the Executive Chef in compiling the annual marketing plans and budgets.

As Executive Pastry Chef, we expect from you: 

  • EU Passport or valid Residence Permit is mandatory in order to work in Greece.
  • Globally recognized culinary qualification.
  • Degree in Hotel and Catering Management will be considered a plus.
  • 5 years of pastry experience.
  • 2 years of supervisory experience.
  • Fluency in English. Greek or any other additional language will be considered as a plus.
  • Strong overall computer literacy, not limited to MS Office.
  • Ability to be flexible regarding shifts.
