Based Mandarin Oriental Jakarta, the F&B Training Manager is responsible for The F&B Training Manager is responsible for, but not limited to, supporting the effective planning, coordination, and delivery of training programs, and learning & development initiatives. This role plays a key part in building colleague capability, supporting career growth, and fostering a culture of continuous learning aligned with the hotel’s service and brand standards. The F&B Training Manager reports to the Director of Food & Beverage.
As F&B Training Manager, you will be responsible for the following duties:
1. F&B Training Coordination & Program Development
- Support the setup of all Food & Beverage Training facilities, including service tools, training stations, menus, SOPs, and materials for training sessions.Design, coordinate, and implement F&B-specific training programs aligned with Mandarin Oriental Hotel Group (MOHG) standards and F&B brand positioning.
- Deliver learning sessions in a creative, practical, and engaging environment, including but not limited to:
- F&B Orientation and Short Orientation
- F&B Orientation : Full onboarding for new F&B colleagues
- Short Orientation : Daily workers & Cross exposure colleague
- On-the-Job Training (Service, Bar, Banquet, Stewarding)
- Legendary Quality Experiences (LQE) – F&B Focus
- Group Training Techniques and Service Simulations
- Conduct live service observations and evaluate F&B colleague performance during training and operations, providing structured feedback and coaching to improve service delivery, product knowledge, and guest engagement.
2. F&B Trainee Management
- Coordinate and manage F&B interns across all outlets and banquet operations, including intake, orientation, rotation planning, and ongoing coordination with L&D Department, F&B Department Heads and Outlet Managers.
3. Service Quality, Learning Matrix & Reporting
- Monitor, track, and report F&B LQE performance, service standards compliance, and guest experience indicators.
- Consolidate, analyze, and communicate LQE full audit and guest feedback results relevant to Food & Beverage, ensuring clear follow-up actions with outlet teams.
- Inspection, service audits, and corrective action follow-ups related to Food & Beverage operations.
4. F&B Learning & Development Administration
- Develop and maintain F&B Learning & Development Plans and On-the-Job Training (OJT) frameworks for all F&B colleagues across service, bar, banquet, and supervisory levels.
- Co-developing training plans : Work with L&D to design F&B Learning & Development plans and OJT frameworks aligned with brand standards
- Share real operational needs, service challenges, and skill gaps across service, bar, banquet, and supervisory levels.
- Ensure training content meets corporate standards, compliance requirements
- Partner with L&D to track completion, competency progress, and on-the-job application, providing feedback for continuous improvement.
- Support the preparation and execution of monthly and annual F&B training calendars, ensuring coverage across all outlets, shifts, and service periods.
- Maintain and organize the F&B Learning & Development Matrix, ensuring training tools, service equipment, manuals, and digital resources are up to date and operational.
- Actively support and embed MOHG’s Mission, Guiding Principles, and Legendary Quality Experiences across all F&B touchpoints.
5. General & Cross-Functional Support
- Represents the Food & Beverage function in assigned F&B and cross-functional meetings (including HACCP, RMC, Leaders Meetings, and Service Quality forums) in the absence of the Director of Food & Beverage or F&B leadership; collaborates with the operation team to identify operational training needs, align training initiatives with business priorities, and support the effective implementation and follow-up of agreed training actions.
- Support the Director of Food & Beverage and F&B leadership by undertaking additional tasks, service initiatives, and quality improvement projects as required, in line with operational needs.
As F&B Training Manager, we expect from you:
Educational Background
Experience
- Minimum of 2 years of progressive experience in Learning & Development/Hospitality Managerial Level, preferably within the hospitality industry.
- Experience in designing, delivering, and evaluating training programs and learning initiatives.
- Comprehensive knowledge of internal departmental operations across the organization.
Skills & Competencies
- Exceptional organizational and multitasking skills with the ability to manage multiple learning programs effectively.
- Exceptional interpersonal skills with the ability to interact across all levels of the organization.
- Proven ability to collaborate, exchange ideas, and work towards shared solutions.

Technical Proficiency
- Computer literacy in Microsoft Office applications including Word, Excel, PowerPoint, Teams, and Outlook.
