Based at our Hong Kong Corporate Office, the Group Director Brand F&B leads the strategic creation, development, and stewardship of world-class restaurant and bar concepts globally. This role drives F&B brand innovation, elevates guest experience, and delivers commercially successful, scalable concepts that strengthen Mandarin Oriental’s brand equity.

Reporting to the Group Director of Food & Beverage, this position works closely with Development, Design, Operations, Brand Management, and Ownership Groups to guide the entire lifecycle of F&B concepts—from market research and creative direction to operational readiness and brand performance.

As Group Director Brand F&B, you will be responsible for:

Brand Development & Creative Direction

  • Lead creative development of signature restaurants, bars, cafés, lounges, retail, and quick-service concepts globally.

  • Translate business needs and brand strategy into compelling, commercially viable F&B concepts.

  • Drive creative direction including naming, brand identity, guest journey, ambience, menu positioning, OS&E, uniforms, and service rituals.

  • Serve as brand guardian for all F&B concepts, ensuring alignment with brand standards and regional relevance.

  • Develop scalable brands as part of Group F&B strategy.

Strategic F&B Programming

  • Architect multi-venue strategies, concept zoning, and spatial planning input for hotels.

  • Develop scalable solutions including Master Prototypes and enterprise toolkits for consistent deployment.

  • Create bespoke F&B brands when owners do not adopt existing prototypes.

Project Leadership & Cross-Functional Partnership

  • Lead cross-functional teams (Design, Culinary, Operations, Marketing, Procurement, Development) to deliver concepts on time and within scope.

  • Present concept briefs, mood boards, and commercial rationale to stakeholders and owners.

  • Manage multiple concurrent projects across development pipelines, conversions, and flagship repositioning.

Market Intelligence & Brand Strategy

  • Conduct market research, competitive mapping, consumer insights, and culinary trend analysis.

  • Evaluate global prototypes for local markets and recommend adaptations.

  • Support long-term strategy with commercial modelling, outlet positioning, and margin optimisation.

Operational Integration & Brand Performance

  • Partner with Operations and Culinary leaders to ensure concepts are executable and profitable.

  • Guide restaurants from pre-opening through launch, ensuring brand integrity.

  • Audit brand performance and recommend enhancements for consistency and guest satisfaction.

Presentations & Innovation

  • Design and produce creative presentations, brand decks, and graphical elements.

  • Manage rich media assets (imagery, video, artwork, templates) and collaborate with creative agencies.

  • Leverage AI to improve processes and validate execution.

  • Define future F&B trends and identify trend-setting opportunities.

Analytics & Research

  • Analyse trade news and industry data to inform recommendations.

  • Develop analytical insights for each concept and maintain research materials.

As Group Director Brand F&B, we expect from you:

  • Minimum 5 years as a Brand Director with F&B concepts, including rollout of restaurant brands.

  • Experience managing owners and third-party relationships.

  • International exposure and experience with franchise-ready brand systems.

  • Extensive hospitality and/or restaurant industry experience, preferably with operational background.

  • Expertise in brand management from concept to completion.

  • Skills in brand development, creative direction, multi-venue programming, market research, and stakeholder relations.

  • Proficiency in Adobe Creative Cloud and presentation design.
