About the job
Based at the San Clemente Palace within the Culinary Department in Venice, the Junior Sous Chef is responsible for supporting the Sous Chef in overseeing daily kitchen operations, ensuring consistent quality, hygiene, and presentation across all sections. This role combines hands-on cooking with leadership responsibilities and contributes to the smooth and efficient running of the culinary team. The Junior Sous Chef reports to the Sous Chef.
As Junior Sous Chef, you will responsible for the following duties:
Assist the Sous Chef in supervising kitchen operations and ensuring smooth workflow across all sections
Lead and coordinate specific services or meal periods as required
Ensure that all dishes leaving the kitchen meet the resort’s high standards for quality and presentation
Monitor and enforce health, safety, and hygiene standards in accordance with HACCP regulations
Train, mentor, and motivate junior kitchen staff and ensure clear communication within the team
Assist with stock control, ordering, and inventory checks
Support with menu planning, recipe development, and implementation
Step in to lead the kitchen in the absence of the Sous Chef
As Junior Sous Chef we expect from you:
Solid experience in upscale or fine dining kitchens, ideally in luxury hotel or resort environments
Strong culinary skills and the ability to lead by example in a fast-paced setting
Excellent organizational and time-management abilities
Sound knowledge of food safety, hygiene, and kitchen best practices
Ability to support, motivate, and train a diverse kitchen team
Flexibility to work varied shifts, including weekends and public holidays
Culinary qualification or diploma is essential; additional leadership training is a plus
