About the job

Based at the Mandarin Oriental Downtown, Dubai within the Bakery Team in Dubai, the Master Head Baker is responsible to oversee all aspects of the baking process, from recipe development to production to final presentation. You will lead a team of passionate bakers to deliver exceptional baked goods that exceed customer expectations consistently. Master Head Baker reports to the Executive Chef.

As a Master Head Baker, you will be responsible for the following duties:

• Support the Executive Chef in managing all bakery operations, including planning menus, pricing, and promotions.
• Lead and motivate the bakery team to produce high-quality and visually appealing baked goods.
• Create and enhance bakery recipes to ensure consistency and excellence.
• Oversee production schedules to meet demand, minimize waste, and maintain product freshness.
• Train and guide team members on baking techniques, food safety, and operational best practices.
• Handle inventory management, ensure cleanliness, and uphold health and safety standards.

As a Master Head Baker, we expect from you: 

• Proven experience as Head Baker in a high-volume setting; 5-star hotel experience is a plus.
• Culinary degree or equivalent certification is preferred.
• International experience across Asia, Europe, North America, and ideally the Middle East.
• Expertise in HACCP standards, baking techniques, ingredients, and equipment.
• Strong leadership, creativity, and passion for innovation in baking.
• Excellent communication, organizational, and multitasking skills, with computer proficiency.
