Based at the Mandarin Oriental Wangfujing, Beijing / within Culinary, the Pastry Chef is responsible for Banquet, Cake Shop, Mandarin Grill dessert and Café Zhi Afternoon Tea daily operation while operating in the established budgets and goals. The Pastry Chef reports to the Executive Pastry Chef.

As Pastry Chef, you will be responsible for the following duties:

- Support company's philosophy and company culture using Departmental Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement.

- Uphold and enforce all hotel policies and procedures as stated in hotel colleague handbook.

- Overall responsible for the daily operation and management of the pastry - room, including the production and quality control of Western - style pastries, breads, and desserts.
- 全面负责饼房日常运营管理,包括西点、面包、甜品的生产制作与质量控制。
- Design and innovate dessert menus according to the catering needs of the hotel, and regularly develop new products that meet seasonal characteristics.
- 根据酒店餐饮需求设计创新甜品菜单,定期研发符合季节特色的新品。
- Strictly control the acceptance, storage, and use standards of raw materials, and optimize cost control.
- 严格把控原材料验收、储存及使用标准,优化成本管控。
- Develop standardized operating procedures to ensure that food safety and hygiene meet the standards of MOHG.
- 制定标准化操作流程,确保食品安全及卫生符合MOHG酒店标准。
- Be responsible for the training and skill improvement of the pastry - room team, arrange shifts reasonably, and supervise work execution.
- 负责饼房团队培训与技能提升,合理排班并监督工作执行。
- Coordinate with the catering department to ensure the dessert supply for large-scale events such as banquets and buffets.
- 协调餐饮部门完成宴会、自助餐等大型活动的甜品供应保障。
- Relate guest comments, positive or negative, to the Executive Pastry Chef and take appropriate actions.
- 在得知客人的评价后,不管是积极或消极,都应立即向厨师长报告并尽可能采取适当行动。

- Proficient in professional skills such as French desserts, European - style breads, chocolate craftsmanship, and sugar - paste decoration.

- Have a solid theoretical foundation in baking and be familiar with the operation and maintenance of various baking equipment.
- 具备扎实的烘焙理论基础,熟悉各类烘焙设备操作与维护
- Have a keen judgment of the characteristics of food materials and be able to independently complete cost accounting and menu pricing.
- 对食材特性有敏锐判断力,能独立完成成本核算与菜单定价
- Have excellent team-management ability, and those with more than 3 years of pastry kitchen management experience in five-star hotels are preferred.
- 具有优秀的团队管理能力,3年以上五星级酒店饼房管理经验者优先
- Be able to adapt to flexible working hours and have stability of production under high - intensity work.
