Based at the Mandarin Oriental Corporate Office in London, the Regional Director of F&B Operations / Europe & Americas is responsible for overseeing Food & Beverage operations across multiple locations within the region. The role ensures exceptional guest experiences, consistency, quality control, financial performance, and service excellence, while maintaining brand standards. The position reports to the Group Director of Food & Beverage and oversees Directors of F&B and Executive Chefs through a dotted-line structure.
As Regional Director of F&B Operations / Europe & Americas, you will be responsible for:
Regional Leadership
Execute regional F&B strategy aligned with the brand’s vision and mission.
Drive award-winning, innovative concepts and ensure operational excellence.
Monitor financial performance, identify opportunities, and implement improvement plans.
Optimize profit margins without compromising guest or colleague satisfaction.
Lead and motivate property F&B leadership teams, holding them accountable for results.
Hotel Openings
Partner with Concept Development and Opening Excellence teams during pre-opening and opening phases.
Ensure operational feasibility of concepts and smooth transition to property teams.
Support hiring of key on-property F&B leadership roles.
Operations
Identify preferred suppliers and negotiate regional partnerships.
Introduce new F&B products and concepts to meet market trends and guest expectations.
Ensure SOPs and policies are implemented and monitored consistently.
Provide guidance on menu engineering and upselling strategies.
Revenue Management
Advise on revenue strategies and oversee budgeting, cost control, and revenue generation for all F&B outlets.
Brand & Communication
Support F&B marketing campaigns and collaborate with Brand, Sales & Marketing, and PR teams.
Drive regional execution of global award strategies to maximize visibility.
Systems
Ensure consistent and accurate usage of systems (e.g., SevenRooms) to maximize performance.
Talent & Learning
Identify and develop talent within regional F&B teams.
Foster a performance-driven culture and attract best-in-class talent.
Support regional training programs and cultural exchange initiatives.
Standards & Auditing
Ensure post-audit improvement plans are executed.
Support properties in meeting goals on quality, safety, and finance-led audits.
As Regional Director of F&B Operations / Europe & Americas, we expect from you:
Bachelor’s degree in Hospitality, Culinary Arts, Business, or related field.
Excellent financial and analytical abilities.
Minimum 7 years’ experience in hospitality F&B management, preferably in luxury concepts (Michelin, Gault & Millau, 50 Best).
Strong background in menu development and guest experience innovation.
Proven ability to manage teams and projects across multiple stakeholders.
