Sous Chef (Dim Sum)

As Sous Chef (Dim Sum), you will be responsible for the following duties: 

  • Inter kitchen communication meetings
  • Responsibilities for all stations of kitchen and overseeing Dim Sum station
  • Technical knowledge and job skills training including effective use of provided materials
  • Creates enthusiasm for training and development amongst all the Culinary Brigade
  • Communication of local and international food trends and market needs to all staff
  • Communication of local requirements, food sanitation laws, safety regulations and other to his/her staff
  • Creativity and innovation, striving for continuous improvement
  • In the absence of Executive Chinese Chef, takes over and fully in charge of the department at any time required
  • Assign specific duties to each staffs, instruct and keep coaching them at all time throughout the production and ensure that all standards are met and kept according to recipe presentation and portion size
  • Check on quality on the product and consistency at all the time to meet standard
  • Coach and inform his/her staff on any new menu, new method, and special events and follow up on any problem or situation that needs improvement
  • To comply with all safety and security regulation
  • Strictly adhere to all Policy & Procedure existing in the hotel
  • Awareness and sensitivity to the concept of luxury and quality
  • Responsive and genuine with guests
  • Incorporates guests information as part of strategy
  • Understands the value of employees, guests and profit link
  • Highly visible and will build relationships with regular and long staying guests.
  • Will create a high level of personalization, details and guest recognition

As Sous Chef (Dim Sum), we expect from you: 

  • Degree or Higher National Diploma in Culinary/Hospitality/Hotel is preferred
  • A minimum of 10 years of experience working in a 5-star hotel environment/Chinese Restaurant
