The Role

The Steward will be an integral member of the pre-opening team, supporting the daily stewarding operations to ensure exceptional standards of cleanliness, hygiene, and efficiency across all kitchen and back-of-house areas. This role contributes to delivering a seamless and safe culinary environment in line with Mandarin Oriental’s commitment to excellence and supports the successful opening of Mandarin Oriental Makati, Manila.

 

Key Responsibilities

Pre-Opening Support

  • Assist in the setup and organization of stewarding areas, including equipment, cleaning stations, and storage areas.
  • Support initial preparation activities to ensure operational readiness prior to hotel opening.
  • Participate actively in onboarding and training programs.


Daily Operations

  • Perform dishwashing, cleaning, and sanitation of kitchen equipment, utensils, and working areas.
  • Maintain cleanliness and hygiene standards across all kitchens and back-of-house facilities.
  • Properly handle, store, and use cleaning chemicals and supplies in accordance with standards.
  • Ensure timely removal and proper segregation of waste.


Operational Support

  • Ensure adequate stock of clean kitchenware, utensils, and equipment for kitchen operations.
  • Assist in the safe handling and storage of kitchen equipment.
  • Support inventory control of stewarding supplies and report shortages when necessary.


Compliance & Safety

  • Adhere strictly to HACCP, food safety, and hygiene standards.
  • Follow all health and safety procedures to maintain a safe working environment.
  • Report any maintenance, hygiene, or safety concerns promptly to the Steward Supervisor.


Collaboration

  • Work closely with the stewarding team, culinary, and food & beverage colleagues to ensure smooth operations.
  • Support team efforts in delivering efficient and seamless service.


Qualifications & Experience

  • Previous experience in stewarding, kitchen operations, or a similar role is preferred.
  • Basic knowledge of hygiene, sanitation, and food safety practices.
  • Experience in a luxury hotel or hospitality environment is an advantage.
  • Ability to work efficiently in a fast-paced, team-oriented environment.
  • Strong sense of responsibility, attention to detail, and commitment to cleanliness.
  • Willingness to work flexible hours, including shifts, weekends, and holidays.
