About the job

Based at the Mandarin Oriental New York within the Culinary Department in New York the Substitute Pastry Tournant is responsible for the day to day preparation of meals as dictated by the menu, guests or management, while maintaining a clean environment and helping out in all areas to achieve guest satisfaction.

The Substitute Pastry Tournant reports to the Executive Pastry Chef.

As Substitute Pastry Tournant, you will responsible for the following duties:

  • Support company's philosophy and company culture through the use of Pillars of Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
  • Consult with the Executive Pastry Chef and other chefs to plan menus.
  • Demonstrate thorough knowledge of pastry arts and techniques and the capability to apply classic pastry baking techniques when preparing pastries.
  • Perform daily dry storage, walk-in refrigerator, and freezers inspected each of your shifts to ensure it is clean, and all pastry items are put away and stored properly.
  • Operate and use pastry equipment, such as rolling pins, piping bags, and pallet knifes effectively and safely.
  • Prepare sauces, batters, dough, garnishes, breads, sweets, pastries, cakes, ice creams, sorbets, fresh fruit jams, chocolates, etc.
  • Execute all pastry orders and accommodate special requests.
  • Transport empty, dirty pots and pans to the wash stations.
  • Work closely with standard recipes and plate presentation to maintain standards of quality in production and presentation.
  • Complete requisitions, obtains proper signatures, submit, pick up transport and store all items.
  • Clean and properly sanitize all work and storage areas.
  • Report and handle any accident immediately, no matter how minor.
  • Maintain a good working relationship with other employees, providing instruction and encouragement as needed.
  • Respond properly in any hotel emergency or safety situation.
  • Follow directions and maintain good working relationships with supervisors,
  • Always maintain the highest level of cleanliness and hygiene standards.
  • Perform other task or projects as assigned by hotel management and staff.

As Substitute Pastry Tournant, we expect from you:

  • Ability to work flexible schedule
  • High School Diploma or Equivalent
  • Two year degree or Apprenticeship
  • Up to Date Sanitation Classes
  • Minimum of Two Years in the luxury Hotel Business
  • Minimum of one year in fine dining food preparation
  • Possess a good written and verbal command of the English Language.
  • Possess a pleasant and outgoing personality
  • Working knowledge of kitchen equipment
  • Basic knowledge of mathematics for recipes, and ordering
  •  Ability to dictate responsibility, pay attention to detail, handle multiple tasks and show a high level of patience
  • Ability to work under high stress conditions
  • Stand/Walk 8 – 12  hours a day

Pay and Benefits:

  •  Pay $33.23 to $44.31 hourly- commensurate with experience and the IWA guidelines
  • A competitive benefits package
