About the job

Based at Mandarin Oriental, Costa Navarino within the F&B Department in Pylos, Messenia, Greece, the Director of F&B is responsible for the overall daily F&B operations, including budgeting, maintenance of quality standards, training and reviews of all colleagues. The Director of F&B reports to the Resort Manager and the General Manager.

As Director of F&B, you will be responsible for the following duties: 

  • Embed Mandarin Oriental philosophy and culture through the use of Legendary Quality Experiences to ensure guest satisfaction and the achievement of our Group Mission Statement.

  • Lead F&B division, providing support and guidance to Ass. Directors of F&B and line Managers and promoting the highest quality standards along with operations efficiency of the F&B outlets.

  • Control and analyze F&B division KPIs: guest satisfaction, product and service quality, colleagues’ engagement, cost control, profitability, health and safety standards.

  • Review department P&L, forecast, and budget.

  • Organize promotions along with the resort's marketing team and menu implementations.

  • Drive the strategic development of the F&B division including planning new activities and bespoke experiences to increase guests capture ratio, review F&B team career progression through yearly performance evaluation and ensure alignment as part of the Exco Team to the overall resort yearly objectives.

As Director of F&B, we expect from you: 

  • Valid EU Passport or Hellenic Residence Permit.

  • Minimum of 2 years' experience in a similar role, in a luxury hotel operation.

  • Degree in Hotel and Catering Management will be considered as a plus.

  • Fluency in English. Greek or any other additional language will be considered as a plus.

  • Knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining. Resort experience will be considered as a plus.

  • Experience in budget preparation, profit and loss statement analysis and forecasting.

  • Experience in Benchmarking activities.
