Mandarin Oriental Conservatorium Amsterdam is looking for an Executive Chef to join our Culinary team.

About the job

Based at the Mandarin Oriental Conservatorium, Amsterdam, the Executive Chef leads the culinary department. The Executive Chef reports to the Hotel Manager.

As Executive Chef, you will be responsible for the following duties:

  • Support company's philosophy and company culture through the use of Departmental Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement.
  • Full responsibility for budgeting, cost control, and performance analysis within the Culinary Division.
  • To supervise the function of all culinary employees, facilities and financial performance to ensure maximum departmental profit and cost efficiency is achieved.

  • Directly accountable for the 7-day-a-week operations of the outlet, including the Taiko Cuisine, Ottolenghi Restaurant, The Lounge & The Bar, In-Room Dining, and Meeting & Events. Responsible for organizing daily tasks as well as weekly and monthly planning across all kitchen departments and their respective chefs.

  • Looking after the wellbeing, making sure the working environment in the kitchen is respectful and positive.

  • Make sure all preparation, cooking and storage areas are constantly clean and a proper turnover of food of items is in place. 

  • Be present and assist with food preparation, run and be present during services.

  • Be responsible and accountable for the overall food cost as well as kitchen supplies, kitchen energy costs and kitchen utensils.

  • Constantly strive to improve kitchen operating procedures.

  • Compliance and daily control of hygiene regulations and cleanliness within the framework of the HACCP guidelines.

  • Create enthusiasm for training and development amongst all culinary colleagues. motivate and lead by example.

  • To be aware of, and comply with safe working practises as stipulated in FHLSS. This will include your awareness of any specific hazards at your work place.

 

As Executive Chef, we expect from you: 

  • Several years of experience as an Executive Chef or in a comparable senior leadership role within luxury hospitality in Europe, ideally in a 5-star or ultra-luxury environment.

  • Proven success in managing and developing large teams.

  • Strategic mindset combined with strong operational expertise.

  • Strong guest orientation and passion for delivering exceptional service.

  • Solid financial acumen with experience in budgeting and performance KPIs.

  • Professional, discreet, and highly responsible.

  • Dynamic, flexible, and team-oriented, with excellent interpersonal skills.

  • Good knowledge of Dutch and English language (written and spoken).

  • Familiar with hygiene code and HACCP regulations.

  • Ability to work evenings and weekend shifts.
