Responsible for the complete leadership and management of our new signature restaurant, inspired by vibrant flavours and seasonal dining experiences. The Restaurant General Manager will oversee guest journey, service excellence, operational performance, and commercial success, while fostering a culture of hospitality and teamwork in line with Mandarin Oriental standards.
This position requires a dynamic and commercially minded leader who can balance operational discipline with guest-focused creativity, develop strong teams, and collaborate across departments to deliver an exceptional dining experience.
As Restaurant General Manager, you will be responsible for the following duties:
Provides overall leadership and direction to the restaurant team, ensuring seamless daily operations;
Leads the team through the rebranding and opening by driving service concept development, team training, and operational readiness, ensuring collaboration and alignment with the wider hotel strategy;
Actively supports Mandarin Oriental’s People & Culture Trainings & Activities;
Works closely with Marketing to ensure public exposure, activations, and partnerships are on brand and on time;
Oversees and continuously elevates the guest journey from reservation to farewell, ensuring exceptional and consistent service;
Monitors guest feedback and online reputation, addressing issues constructively and implementing improvements;
Drives financial performance by managing labour, revenue, and costs, always aiming for sustainable profitability;
Builds strong relationships with guests and the local community, positioning the restaurant as a leading destination;
Coaches, mentors, and develops the FOH team, fostering a high-performance culture and succession planning;
Ensures compliance with health & safety, licensing, and company standards;
Collaborates closely with the culinary team to ensure operational harmony and a unified guest experience;
Maintains a welcoming, organised, and professional restaurant environment at all times;
