About the job
Based at Mandarin Oriental Punta Negra, Mallorca, as a Head Sushi Chef you will be responsible for preparing and presenting sushi and other Japanese dishes in accordance with Matsuhisa’s and Mandarin Oriental´s standards and culinary philosophy. The role involves ensuring exceptional quality, taste, and presentation of all items, maintaining the highest standards of hygiene and food safety, and working closely with the kitchen team to deliver an outstanding dining experience for our guests.
As Head Sushi Chef, you will be responsible for the following duties:
Prepare, oversee, and supervise the creation of sushi, sashimi, and other traditional Japanese dishes, ensuring authenticity, precision, and flawless technique.
Guarantee exceptional flavor, texture, and visual presentation in every item served, maintaining the restaurant’s highest aesthetic standards.
Handle and manage fresh ingredients with utmost care, ensuring proper storage, rotation, and optimal product utilization.
Uphold strict standards of hygiene, cleanliness, and food safety throughout the sushi and raw fish section.
Organize, set up, and restock the sushi bar and workstations before and during service to ensure seamless workflow.
Supervise the receiving and inspection of seafood and fresh produce, verifying quality, origin, and freshness according to restaurant specifications.
Operate, sharpen, and maintain Japanese knives and sushi tools with precision, discipline, and safety.
Collaborate closely with the kitchen brigade and front-of-house team, ensuring smooth, timely, and consistent service.
Lead, train, and motivate the sushi team, ensuring mastery of traditional techniques and adherence to the restaurant’s excellence standards.
As Head Sushi Chef, we expect from you:
Experience and education
Culinary education or relevant training in Japanese cuisine.
Minimum of 3-5 years of experience in a similar position, ideally within luxury hospitality or Japanese fine dining restaurants.
Technical Skills
Sushi and sashimi preparation
Expert knowledge and handling of fish and seafood
Knife precision and fish handling
Rice preparation and seasoning
Food safety and hygiene
Plating and presentation
