Scope of Position:

The Pastry Sous Chef will be responsible for assisting the Pastry Executive Chef and the Executive Chef in ensuring the proper running of the Pastry kitchen department as a whole. He/She ensures that agreed quality, hygiene and other standards are kept or surpassed, at all times.

Duties & Responsibilities:

  • Is responsible for checking the quality of all food production in the kitchen and maintains the highest standards achievable.
  • Communicates any operational problems and staff recruiting needs to the Executive Chef and the Pastry Executive Chef.
  • Ensures all food items (including Banqueting and Breakfast) are of high standard and are ready to serve on time.
  • Carries out the kitchen requisitioning and ordering.
  • Oversees stock rotation (F.I.F.O.).
  • Is responsible and accountable for the overall food cost as well as kitchen supplies, kitchen energy costs and kitchen utensils.
  • Proposes, and initiates when approved, new services and products for our guests.
  • Performs any other reasonable duties as required by the department head from time to time.
  • Attends all training sessions arranged by Mandarin Oriental.
  • Checks standard recipes, ensuring proper portion control, uniformity of taste and quality.
  • Writes daily food requisitions and kitchens transfers in order to achieve the stock rotation desired.
  • Carries out other duties as and when requested by management.

Qualifications / Experience:

  • EU Passport or valid Residence Permit  is mandatory in order to work in Greece.
  • Globally recognized culinary qualification.
  • Degree in Hotel and Catering Management will be considered as a plus.
  • 4 years experience in a relevant position as Pastry Sous Chef.
  • Experience in running kitchens and culinary teams.
  • Experience in running restaurants and kitchens to budget targets.
  • Technical knowledge and job skills training including effective use of the provided materials.
  • Reading, writing and verbal proficiency in English.
  • Reading, writing and verbal proficiency in Greek is desirable.
  • Menu planning and recipes knowledge.
  • Cost control awareness and ability to keep to budgets.
  • Good kitchen organization experience.
