Organizational Structure
The Sommelier reports directly to the Italian Restaurants General Manager and Asst. Director of Food & Beverage.
Duties and Supporting Responsibilities
Administration
• Ensure that restaurant team have good knowledge of wine and food
• Control on a daily basis the proper storage, aging rotation, and temperature of all stock in beverage storeroom and report any problems and malfunctions
• Ensures all beverage equipment and wine lists are clean and updated with correct vintage and out of stock items
• Checks and monitors the service bar operations (Main service bar and restaurant bar).
• Liaises with the Purchasing Manager to ensure efficient ordering and stock levels during high and low seasons (have proper inventory system in place for the cellar and review receiving / ordering procedures)
• Performs any other reasonable duties as required by the Director of Food & Beverage
Human Resources/ Colleagues
• Supervise F&B service by directing and guiding colleagues, providing them with feedback.
• Identify and carry out any specific training and development needs among the team.
Financials
• Maintains accurate sales records of wines for analysis and incentive purposes.
• Engages in suggestive selling and up-selling.
• Helps to organise wine promotions to promote the restaurant during quiet periods.
Maintaining Standards
• Support company's philosophy and company culture through the use of Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
• Support company's philosophy and company culture through the use of Departmental Legendary Quality Experiences on a daily basis to ensure Guest Satisfaction and the achievement of our Mission Statement
• Support company's philosophy and company culture through the use of Guiding Principles and D.E.L.I.G.H.T as part of ensuring Guest Satisfaction and the achievement of our Mission Statement
Guest Service
• Ensure guests wine preferences are remembered by colleagues and recorded in PMS System
• Be on duty on the floor during service and to recommend the best possible wines to complement the food ordered; keeping in mind the guest budget and guest preference
• Deal with guest complaints about wine according to MO standards and communicate to Restaurant Manager where appropriate
Hygiene and Cleanliness
• Ensure that hotel grooming and hygiene standards are being maintained, enhancing a professional image
Health and Safety
• Be aware of, and comply with, safe working practices as laid down under FLHSS. This will include your awareness of any specific hazards at your workplace.
• Be aware of and comply with local and relevant Food Hygiene Standards.
• Wear any appropriate protective clothing provided by or recommended by the Hotel.
• Report any defects in the building, plant or equipment according to the Hotel procedures.
• Ensure any accidents to colleagues, guests or visitors are reported in accordance with Hotel procedures.
• Attend all statutory fire training and to be fully conversant with and abide by all rules concerning, fire, health & safety.
o Be aware of Fire safety plans.
o Adhere to Safe & Sound procedures regarding Health & safety.
o Adhere to Safe & Sound procedures regarding HACCP standards.
• Attend any training deemed appropriate by your Head of Department.
• To be responsible for the Safe &Sound procedures followed by your peers.
