About the Job:
The Junior Sous Chef at Mandarin Oriental Paris, Paris assists the Sous Chef in overseeing the kitchen's daily operations. Responsible for supporting culinary production, quality control, and team management, the Junior Sous Chef ensures the smooth and efficient running of the kitchen in line with the hotel’s high standards of excellence.
As Junior Sous Chef you will be responsible for the following duties:
Assisting in the supervision of all kitchen sections to ensure seamless coordination and execution of service.
Supporting the Sous Chef in leading, training, and mentoring the kitchen brigade, especially junior chefs.
Ensuring consistency in the preparation and presentation of all dishes across multiple stations.
Managing kitchen operations in the absence of the Sous Chef, ensuring standards are maintained.
Helping to develop new menu items and contribute creatively to seasonal offerings and special events.
Controlling food cost through effective stock management, portion control, and minimizing waste.
Ensuring that hygiene, sanitation, and food safety procedures are rigorously always followed.
Participating in daily briefings, coordinating with front-of-house teams to ensure guest satisfaction.
Upholding the values and vision of Mandarin Oriental by delivering excellence in every aspect of kitchen operations.
As Junior Sous Chef, We Expect from You:
A deep passion for culinary arts and a strong desire to grow within a world-class luxury kitchen.
Previous experience as a Chef de Partie or Junior Sous Chef in a fine dining restaurant or luxury hotel.
Strong leadership capabilities with a collaborative and motivating approach to team management.
Precision, discipline, and an eye for detail, with the ability to work efficiently under pressure.
High proficiency in French (spoken and written); English is a plus.
In-depth understanding of HACCP, food hygiene, and kitchen safety standards.
A positive attitude, resilience, and the ability to take initiative in a dynamic environment.
Culinary degree or equivalent professional training.
Strong organizational skills and the ability to multitask effectively.
