SHIFT PATTERN (40 hours, 5 days per week)

We’re looking for a Sous Chef to join our vibrant and dynamic Culinary team.

As Sous Chef at Mandarin Oriental you will play an integral part in facilitating an experience like London has never known. By working through Chef Akira Back’s world famous dishes and operational strategy, you will be part of the management team leading the best-known outlet kitchen brigade.

Sharpen your skills and learn invaluable new ones as you transcend hospitality in seamless fashion and lively interactions.

As a Sous Chef at Mandarin Oriental Mayfair, you will be responsible for:

  • Being able to organize the team and workflow to execute the Akira Back’s standardized dishes according to the recipes and user guides in a high volume atmosphere for high profile guests.
  • Driving the team to maintain the highest level of productivity and efficiency in overall food preparation in Akira Back Restaurant, ABar Lounge, ABar Rooftop and In-Room Dining.
  • Being able to project and procure the adequate amount of products and prepare in timely manner.
  • Demonstrating the ultimate level of food safety, understanding HACCP principles, possess the highest personal hygiene and be able to train the team.

As a Sous Chef, you will be working on a rotating shift basis, Monday to Sunday, 40 hours a week. Shift patterns will vary from morning and evening shifts(including weekends and bank holidays), so flexibility is required where applicable.
