About the job
Based at the Mandarin Oriental, Hong Kong within Food & Beverage Division in Hong Kong, the Director of Food & Beverage is responsible for overseeing and maximizing guest experience, quality standards and business performance of the Food & Beverage outlets. The Director of Food & Beverage reports to the Deputy General Manager.
As Director of Food & Beverage, you will be responsible for the following duties:
Major responsibilities
- Ensure the profitability, efficiency and creativity in each Food and Beverage outlets including banquet functions, outside catering events and in-room dining;
- Partner with Sales & Marketing to increase exposure and coverage of the Food & Beverage outlets in various local and international media;
- Analyse and control food and beverage cost in order to achieve financial targets;
- Plan menus, prices and promotional events for all Food & Beverage outlets in order to maximise revenue generating opportunities;
- Identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, guest feedback from various channels as well as guest incident reports, and formulate action plans;
- Stay attentive to market trends in culinary arts, beverages and service style in order to induce creativity in the operation;
- Manage Food & Beverage outlets concept changes and renovations as well as the annual CAPEX handling
- Maintain a team of well-trained and motivated colleagues in order to deliver a high level of service according to Group’s and international luxury hotel standards;
- Meet and greet all VIPs and influential clients and ensure there is follow-up on all discussed details;
- Be part of the Executive Committee team and provide advice and support in decisions and projects relating to the entire hotel.
- Work closely with all related departments within the hotel to maximise collaboration and efficiency.
- Perform any other reasonable duties as required by the Hotel Manager or General Manager from time to time.
Financial responsibilities
- Manage budget of the entire Food & Beverage Division, monitor and control the expenses and ensure that there is no substantial overrun of costs
- Accurately forecast financial performance
- Review constantly and control operational cost without reducing quality and guest experience.
- Work closely with Finance in reviewing financial performance regularly.
People & Culture responsibilities
- Provide support to People & Culture in recruiting, training and developing colleagues.
- Build effective teams, and provide comprehensive development and succession plans for the division.
- Introduce effective training program across the division.
Health and Safety responsibilities
- Ensure the F&B Division is compliant to all Fire, Life, Health, Safety and Security standards adopted by the Group;
- To be aware of and comply with all F&B licence related matters.
- To report any defects in the building or equipment according to the Hotel procedures.
- To ensure any related accidents to colleagues, guests or visitors are reported in accordance with Hotel procedures.
As Director of Food & Beverage, we expect from you:
At least 5 years' experience in similar capacity, preferably with luxury hotel experience
Proven track record in overseeing renovation projects
Strong expertise in operational strategy, project management, and human resources planning
Ability to thrive in a fast-paced, dynamic environment and adapt to changing business needs
Must have strong understanding of Food and Beverage financials including cost and par controls
A strategic thinker with a pragmatic, hands-on approach to problem solving
Excellent managerial and interpersonal skills
Passion in customer service and hospitality industry
Able to work under pressure
International exposure will be an advantage
Fluent in English, knowledge of other languages is a plus
