About the job
Based at the Mandarin Oriental, Hong Kong within Kitchen Division in Hong Kong, the Junior Sous Chef is responsible have the vision and future planning to assist in development to drive their department in all aspects, whilst assisting the Executive Pastry Chef in following all MOHKG guiding principles. The Junior Sous Chef reports to the Head Pastry Chef – Terrace Boulud.
As Junior Sous Chef - Terrace Boulud, you will be responsible for the following duties:
Assist the Executive Pastry Chef with the day to day running of the department and be responsible for the outlet's and overall quality of products produced.
To be aware of and adhere to company policies and statutory requirements with regards to health and safety, sanitation, fire procedures and HACCP.
Demonstrate a professional attitude when dealing with all colleagues and train them to consistently adhere to the quality standards of the culinary department at all times.
To search, find and streamline the process of staff replacements and casual employees, and to find suitable applicants.
Maintain a high standard of cleanliness and sanitation in and around all culinary work areas.
As Junior Sous Chef - Terrace Boulud, we expect from you:
At least 5-7 years relevant experience in pastry kitchen, preferably from high-end bakery and patisserie
Well interpersonal skills, multi-Tasking and self-motivated,;
Attention to details, well-organized and responsible;
Independent and able to work under pressure.
