About The Role
As Pastry Cook at Mandarin Oriental Ritz, Madrid you will prepare, produce and finish a wide range of pastry items — from plated desserts and petit fours to breads and viennoiserie — ensuring consistency, quality and presentation at MOHG standards. You will support service across outlets and events, maintain mise en place, assist with menu development and contribute to cost control and stock management.

Key Responsibilities

  • Produce pastries, desserts, breads and confectionery to MOHG recipes and presentation standards.
  • Prepare mise en place, doughs, creams, glazes and sauces; ensure workstations are organised and service-ready.
  • Support banquet and event production: execute plated desserts, plated pastry stations and large-scale pastry requirements.
  • Follow portion control, costing and stock rotation procedures; assist with inventories and ordering as required.
  • Maintain high standards of food safety (HACCP), allergen control and kitchen hygiene at all times.
  • Operate and care for pastry equipment safely (ovens, mixers, blast chillers, steamers); report faults and follow maintenance routines.
  • Collaborate with Executive Pastry Chef/Head Chef on menu development, seasonal concepts and daily specials; provide creative input.

What We Expect From You

  • Formal pastry/culinary qualification or equivalent vocational experience.
  • Minimum 1 year experience in pastry roles, preferably within luxury hotels, fine dining or high-volume banqueting.
  • Strong technical skills across classical and modern pastry techniques (lamination, tempering, sugar work, chocolate).
  • Allergen awareness, HACCP knowledge and commitment to food safety.
  • Excellent attention to detail, a creative mindset and pride in presentation.
  • Ability to work under pressure, flexible with shifts, events and weekend service.
  • Fluent in English and Spanish preferred; additional languages are an advantage.
